Some people eat to live, but I've never been one of those people. I live to eat. I love good food and I love sharing it with friends and family. My obssession with cooking was started at a young age when I was always adding my own flavour to my mother's recipes. While she often shooed me out of the kitchen, I was smitten with the idea of creating new taste sensations-- an adventure that hasn't ended yet.

Cardamom Thumbprint Cookies with Tamarind Jam

jam
½ cup of brown sugar
½ cup of tamarind paste
2 tbps of rum
Put all three ingredients in a small pot. Heat to a simmer, and stir for 2 to 3 minutes. Mixture will become glossy. Set aside and cool.
Cookies
½ cup icing sugar
½ cup unsalted butter (room temperature)
1 ¼ cups of white flour
½ tsp of lime zest
½ tsp salt
1 tsp of ground cardamom
Cream together butter, and icing sugar. Add in zest, salt and cardamom, mix thoroughly.
Add in flour and combine until mixture forms a dough.
Roll into about 12 1-inch balls.
Press thumb into centre of each ball. Refrigerate for ½ hour.
Put 1 tsp of jam mixture into centre well of each cookie. Bake at 350F

Well mine don't look as nice as yours.. my cookie was crumbly so I am not sure what I missed or did wrong however... they taste delicious. I will definitely make another attempt as the taste is worth the try. Thanks again for another great recipe Carrie.

Hi Leah,
It's been a while since I made these, but I do remember them being "delicate". You did chill them before baking? I notice I didn't put a baking time. I would recommend baking until only lightly tinged with colour. Hope that helps.
P.S. I heard about your trouble finding tamarind paste. I'll do a post soon on how to make your own. (it's really easy.)

Hey Carrie.. They taste delicious and are worth the challenge. I think my apartment is too cool as well.. it took forever for the butter to come to room temp. I had teh same issues with shortbread this year. I will be attempting again and learning how to make tamarind would be awesome. A co-worker brought me some today that she got at Oceans in a block. I think I baked them for about 10 minutes.. I watched them very carefully and did exactly as you said.. watched for a lightly tinged colour.
